Ingredients:

• 50ml Rabbit24 Scallop Gin

• 25 ml fresh grapefruit juice

• 15 ml lime juice

• 10 ml liquid honey

• 75 ml soda water

• Ice cubes

• Slice of grapefruit or sprig of rosemary for garnish

Preparation:

Fill a cocktail shaker with ice cubes.

Add the Rabbit24 Scallop Gin, fresh grapefruit juice, lime juice and liquid honey to the shaker.

Shake vigorously for 15-20 seconds to thoroughly mix and cool all ingredients.

Strain the mix into an ice-filled tumbler glass.

Top with soda water and stir gently.

Garnish with a slice of grapefruit or a sprig of rosemary on the rim of the glass.
